Mini Caramel Apple Pies

Ingredients:
-2 Pillsbury refrigerated pie crusts (they come in a box together)
-1/2 (21 oz) can caramel apple pie filling
-1 teaspoon ground cinnamon (optional)
-1 teaspoon lemon juice (optional)
-egg wash (1 egg white, beaten and 1 tablespoon water)
-1 1/2 cups powdered sugar
-3-4 tablespoons milk
Directions:
1. Preheat oven to 425°. Line a large cookie sheet with parchment paper and set aside.
2. Unroll the 2 pie crusts and place on a level workspace for 5-10 minutes before cutting into pieces. You want the pie dough to be at room temperature before using.
3. Pour the pie filling into a bowl and cut up the apple slices into smaller pieces so they will fit into the hand pies, add in lemon juice and stir (optional).
4. Using a 3-inch circular cookie cutter or cup, cut out as many circles as possible. Re-roll the scraps and continue cutting out circles until you run out of dough, ensuring you end up with an even number of circles. (I was able to get about 8 whole pies and 4 half pies)
5. Place six-eight of the dough circles on a parchment paper-lined cookie sheet. Spoon a small portion of the apple filling into the center of each circle, leaving enough of a border around the filling. Sprinkle with cinnamon (optional).
6. Place a second dough circle atop each filled circle then use a fork to crimp the edges together, sealing each pie.
7. Brush each pie with the egg wash, and using a sharp knife, cut two or three vents on the top of each pie. Sprinkle the pies with crystal sanding sugar (optional). I did about 6 with the sugar and 4-5 without so I could use the icing glaze.
8. For the glaze, add the powdered sugar and milk to a small mixing bowl. Whisk until well combined and set aside.
9. Bake the pies for about 15 minutes, or until they're golden brown.
10. Remove pies from oven and allow to cool for 5 minutes
11. After 5 minutes of cooling, dip the warm pies into the glaze, covering each pie entirely. Place back on the lined cookie sheet to completely cool.
12. ENJOY!!
Serving tip:
Serve warm with vanilla bean ice-cream. Top with whipped cream and caramel sauce.
